SANDHYALA GAJROON (Sindhi Carrot Pickle)


Ingredients:
Carrots .... 2
Mustard seeds .... 1 tbsp. ( Ground coarsely)
Turmeric powder ... 1/4 tsp
Red chilli powder .... 1/2 tsp.
Salt ......... to taste
Mustard oil ....... 2 tsp.
Vinegar ............ 2 tbsp.


Method:


1. Peel the carrots and cut them into long 2" pieces.
2. Mix all the above ingredients with the carrots.
3. Put them in a jar. Pickle will be ready in 2-3 days.
Note: If you don't have mustard oil you may use any cooking oil. But the pickle tastes better with mustard oil.

  2. Its been ages since I've had a carrot pickle. My mum use to make something similar ever so often. Like this instant pickle recipe.

  5. What is the shelf life of this pickle? Does it get spoilt soon?

    1. If kept outside it might spoil as there is not much oil or preservatives added to it.
