SAI BHAJI ( Spinach cooked with lentils and vegetables )


Sai bhaji is a very popular sabzi in the Sindhi Cusine. It is supposed to be one of the healthiest dish as it has greens, vegetables and lentils. It is usually served with bhuga chanwara / saawa chaanwara / khichni 

Ingredients:
Palak (spinach)........ 1 bunch
Onion ........................ 1 chopped
Tomato ..................... 1 chopped
Carrot ....................... 1 chopped finely
Potato ....................... 1 chopped finely
Green chillies ........... 2
Ginger paste ............ 1 tsp
Chana dal .................. 1/4 cup (soaked)
Turmeric powder 1/4 tsp
Dry mango powder 1tsp (or) tamarind juice 1 tbsp. (optional)
Salt to taste
Oil

For tempering:
Garlic .................. 4-5 pieces (Crushed)
Red chilli powder ......... 1 tsp.
Garam masala .............. 1 tsp.( or crushed cumin powder)

Method:

1. In a pressure cooker pour a little oil, saute the ginger, onion for 2-3 minutes. Add the chopped potato, carrot, green chilli and tomato, stir fry for 2 minutes.






2. Add the chopped palak and the soaked chana dal, salt, turmeric and enough water to cook.( about 1 cup)









3. Close the cooker and cook for 4-5 whistles. Allow it to cool before opening.








4. Mash the palak.









5. Heat 2 tbsps oil in a small pan. Add 1 tbsps of crushed garlic. When it is golden brown switch off the gas and add a pinch of red chilli powder.






6. Stir it into the palak.
